Spring Dining Room

Spring Dining Room is a mid-sized restaurant situated on a large 1-rai plot of land in the heart of Sukhumvit.  It opened in the mid-2004, and the house it’s located in has been transformed into a white restaurant, surrounded by big modern simple panes of glass with a menu printed on recycled A3 paper.

Spring serves what I call Contemporary Thai cuisine, in a presentation style that, on purpose, is not very traditionally Thai.  And with the positive reception of the restaurant, now in its 10th year, the menu at Spring has grown along with my experience, into what is today known as Asian Contemporary.

Summer Chocolate House

I wanted to make desserts for adults, and that was the gravitating thought behind Summer Chocolate House.  I wanted adults to feel like they have been teleported back to their childhood days, where they could enjoy simple desserts, such as cakes their mom may have made, or delicate crepes, or homemade waffles, or anything with lots of chocolate in it, and nicely topped off with a big hot chocolate, of course.

Summer is one of a first dessert houses to offer what’s known as a Plate Dessert, which is dessert nicely arranged on a plate, and comprising more than just a slice of cake or dessert in a cup.

Summer is a time to rest, a time to pamper oneself and appreciate the carelessness of ‘Childhood Indulgence’ – and that has been the anchoring thought behind the essence of celebrating this season and the desserts served here.

Winter Bar

Winter Bar, a large field of grass that is littered with oversized cushions, is a new experience in indulgence that allows one to sit, sleep and gaze at the stars while enjoying a selection of food, desserts, milk, tea, coffee or even your favorite glass of martini – which are all possibilities on this grassy paradise.


Concept of Winter Bar

The concept of Winter Bar is an original experience in fine dining, and the oversized pillows that have become symbolic of the experience of the space, becoming popular merchandise at the restaurant and has also become a prevalent item among the general market as well.

Winter Bar is a hot/cold experience, allowing you to gently lay down and watch the stars with someone you love, or someone whose love you desire, or with whomever you wish.
